Why experienced chefs add vinegar to a pan before frying, following an old kitchen trick

Acid can damage the coating faster, so it is better to skip this method.

What is vinegar really good for

However, it is especially useful for cleaning. It helps dissolve grease and remove lighter dirt. When cooking, it is best used in marinades, sauces and dressings.

What to do to prevent food from sticking

If you want to avoid sticking, prepare the pan well enough. The most important factor is temperature. When the metal heats up evenly, its pores close and the surface is less sticky.

That is why professional chefs always give the pan time to heat up before pouring oil into it. You can check if it is ready with a simple trick: drop a little water on the bottom. If the drop does not evaporate immediately, but gathers and “dances” on the surface, then the temperature is right.

At this point, a thin layer of oil can be applied, which spreads nicely and creates a kind of protective layer between the metal and the food. This way, the ingredient will be easier to separate from the surface, regardless of the type of pan you are using.

It’s interesting that many of these kitchen tricks are actually simple physical processes that seem like magic at first glance. It also often turns out that the best results come from well-practiced basics, not some quick trick.
