Ultimate Slow-Cooked Oxtail Stew (Rich, Tender & Flavor-Packed)

🧂 Step 1: Preparing the Oxtail

Start by washing your oxtail pieces under cold water. Pat them completely dry using paper towels—this is very important because dry meat sears better.

Season generously with salt and black pepper. If you want to go deeper with flavor, mix the marinade ingredients and coat the oxtail thoroughly. Cover and let it sit in the fridge for at least 2 hours, or ideally overnight.

This step helps the seasoning penetrate the meat and makes the final dish much more flavorful.
🔥 Step 2: Searing for Maximum Flavor

Heat a large heavy pot (preferably a Dutch oven) over medium-high heat. Add vegetable oil.

Lightly dust the oxtail pieces with flour (optional but helps create a nice crust). Place them in the pot in batches—do not overcrowd.

Sear each piece until deeply browned on all sides. This step is crucial. The brown crust is what gives the stew its rich, deep flavor.

Once done, remove the oxtail and set aside.

In the same pot, lower the heat to medium. Add chopped onions and cook until soft and golden (about 8–10 minutes).

Add garlic, carrots, and celery. Cook for another 5 minutes.

Now add tomato paste and stir well. Let it cook for 2–3 minutes until slightly darkened—this removes the raw taste and adds depth.

Add fresh tomatoes and cook until the mixture thickens and becomes rich.

Return the seared oxtail pieces to the pot. Pour in the beef stock until everything is mostly covered.

Add:

Bay leaf
Thyme
Paprika
Black pepper

Stir everything gently.

Bring to a boil, then reduce heat to very low. Cover and let it simmer slowly.

This is where the magic happens.

Let the stew cook for 3 to 4 hours on very low heat. Stir occasionally and check the liquid level.

The oxtail will slowly become tender as the connective tissue breaks down, releasing collagen into the sauce. This creates a rich, silky texture that you simply cannot rush.

If needed, add more water or stock during cooking.

About 45 minutes before the end:

Add potatoes (if using)
Add chickpeas or olives (optional)

Continue cooking until everything is tender and the sauce thickens.

Taste and adjust seasoning:

Add salt if needed
Add a squeeze of lemon juice for brightness

Garnish with fresh parsley or cilantro.

Let the stew rest for 10–15 minutes before serving. This allows the flavors to settle and deepen.
