Step 1: Prep Your Pan
Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides for easy removal. Lightly grease the parchment.
Step 2: Make the Caramel Layer
In a large saucepan, combine butter, brown sugar, and sweetened condensed milk.
Cook over medium heat, stirring constantly, until the mixture comes to a gentle boil.
Continue cooking and stirring for 5 minutes until slightly thickened and caramelized. (The mixture will darken slightly.)
Remove from heat.
Step 3: Add the Crunch
Immediately stir in crispy rice cereal (and any nuts or pretzels) until completely coated.
Step 4: Press into Pan
Press the mixture firmly and evenly into the prepared pan. Use a greased spatula or greased hands to compact it well—this helps the bars hold together.
Step 5: Melt the Chocolate
In a microwave-safe bowl, melt chocolate chips in 30-second increments, stirring between each, until smooth. (Alternatively, use a double boiler.)
Step 6: Spread the Chocolate
Pour the melted chocolate over the pressed cereal layer and spread evenly.
Step 7: Add Toppings (Optional)
If desired, sprinkle with:
Flaky sea salt
Extra chopped nuts
Toasted coconut
Drizzle of white chocolate
Step 8: Chill
Refrigerate for at least 2 hours until completely firm.
Step 9: Slice and Serve
Lift the bars out using the parchment overhang. Place on a cutting board and slice into squares with a sharp knife. For clean cuts, wipe the knife between slices.
Pro-Tips for Bar Perfection
1. Press Firmly
A loosely pressed base will crumble when you cut the bars. Press firmly and evenly.
2. Don’t Overcook the Caramel
Five minutes is the sweet spot. Overcooking can make it too hard; undercooking makes it too soft.
3. Use Good Chocolate
Quality chocolate makes a noticeable difference. Semi-sweet or dark balances the sweet caramel.
4. Add Salt
A sprinkle of flaky sea salt on top elevates everything.
5. Let Them Set Completely
Two hours minimum in the fridge. Overnight is even better.
6. Cut with a Hot Knife
Run your knife under hot water, wipe dry, and slice. Repeat between cuts for neat squares.
Endless Variations
Salted Caramel Chocolate Crunch:
Sprinkle flaky sea salt on top before the chocolate sets.
Peanut Butter Caramel Crunch:
Add ½ cup creamy peanut butter to the caramel mixture. Use peanut butter chips for drizzle.
